Healthy Recipes

There is nothing better than a good chicken noodle soup.  With H1M1 flu going around and everywhere I go it seems everybody has some kind of sickness.  Here is one of my family’s favorite recipe for good chicken soup.

This great recipe could be prepared in 20 minutes.  Freeze portion for those special days:(   

Ingredients:

2 teaspoons olive oil

1 cup chopped onion

1 cup diced carrots

1 cup sliced celery

1 garlic clove-minced

1/4 cup whole wheat all purpose flour

1/2 teaspoon dried oregano

1/4 teaspoon dried thyme

1/4 teaspoon poultry seasoning

6cups of fat-free, less sodium chicken broth

4 cups of diced peeled red skin potato

1 teaspoon of sea salt

2 cups of shredded  cooked chicken breast

1 cup of fat free evaporated milk

4 ounces (2cups) Barilla plus uncooked noodles

Directions:

1.  Heat olive oil in a pan over medium heat.  Add all the veges and saute for 5 minutes

2. Lightly spinkle flour, oregano, thyme, and poultry seasoning over vegetables and cook 1 minute. Add broth, potato, and salt, bring to a boil.  Reduce heat and simmer.

3.  Add chicken, milk, and noodles, cook for 10 minutes.

Makes 8 servings (serving size is 1 1/4 cups).

calories 247, fat 4.5g, protein 18g, carbs 32.8g, fiber 2.9g, sodium 701mg.
