Try These Favorite Salads And Exquisite Dressings

I am always looking for new and exciting salad creations. If you have any favorite recipes you can submit to www. Steve@FitnessLincoln.com.  I personally choose salad for my supper alot of the times. 

My Favorite Chicken/Fish Salad with Ginger-Sesame Dressing

  • 1 cup shredded Napa Cabbage
  • 1 cup shredded Romaine lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup diced tomatoes
  • 1/4 cup diced avocado (optional)
  • 1 5oz grilled chicken breast or 5 oz of white fish (halibut,mackeral,swordfish)

Chicken Salad with Raisins & Apples with Curry Dressing

  • 1/3 cup of raisins
  • 1 5oz chicken breast boiled and shredded
  • 1 small apple, cubed
  • 1 stalk celery, diced
  • 2 tablespoons toasted pumpkin seeds

 

Black Bean Salad

Here is the dressing:

  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon toasted pumpkin seeds
  • Fresh cilantro leaves, chopped

 

  • 1/2 can black beans, drained and rinsed
  • 1 tomato, chopped
  • 1/2 cup finely chopped onion
  • 1/2 cup diced red bell pepper
  • 1 garlic clove minced
  • Salt and fresh ground pepper

 

Chicken Taco Salad ( without the shell)

  • 1 cup shredded Napa Cabbage
  • 1/2 cup shredded Romaine lettuce
  • 1/2 cup of black beans rinsed
  • 1 tomato cubed
  • 1/4 avocado, cubed
  • 1 5 oz chicken breast boiled and shredded
  • 1 tablespoons extra virgin olive oil

Favorite Dressings

 

Mexican Suprise

  • 4 medium tomatoes, chopped
  • 1/2 large onion, chopped
  • 1/4 cup minced fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/2 jalapeno or serrano chile, seeded and minced

 

Ginger-Sesame Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons low sodium soy sauce
  • 2 cloves garlic minced
  • 2 tablespoons of honey
  • 2 tablepsoons of minced ginger
  • 1 teaspoon sesame oil

Curry Dressing

  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon balsamic vinegar
  • 1/2 cup of extra virgin olive oil
  • 1 teaspoon curry powder
  • 2 tablespoon honey

Orange Cilantro Dressing

  • 1/4 cup fresh orange juice
  • 2 tablespoons chopped cilantro
  • 1 garlic clove minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
